I made this up this morning. OMG it was so gooooood. It's too bad I didn't have any crackers. It would also make a really great dip. 3 avocados 1 red pepper 1 tomato 2 pinches of cayenne 3 caps of Apple cider Vinegar Chop up red pepper, and tomato really fine. Mash up avocados with a fork, mix vinegar, cayenne, and then place veggies and stir. Let it sit for 5 minutes.

Enough said. Anyone try it? I had some of each sitting around and decided to make a paste with a rather small Hass Avocado and Peanut Butter and smear some on a single slice of Ezekiel 4:9 Toast.

I adapted this from Dr. Fuhrman's apple cake recipe in his book, "Eat to Live." Had it this morning after a hard workout. It was really, really good: 1/4 tsp vanilla 1/4-1/2 cup apple juice or cider 1 tsp cinnamon 1-2 Tbsp vanilla brown rice protein powder 1/4 cup soy or almond milk 3 apples, chopped 1/4 cup raisins 1/2 cup rolled oats top with soy or almond milk if desired (I used homemade sesame milk) Stir the vanilla into the juice, then add all to apples, raisins and oats. Bake uncovered at 350 for 1 hour. (I covered it half way through with foil). This was seriously good I mixed it up the night before, then popped it in the oven while working out.

really simple recipe 1. buy a sweet potatoe 2. wash it 3. bake it in foil for 40 minutes or so on 400 degrees 4. put some salt and pepper on it and enjoy! sometimes I put some almond butter or olive oil on them...but not always. I forgot how good these things are! a great substitue for rice/pasta or any other gluten-rich stuff. Good to give your body a break from all the gluten every now and then.

A vegan banana bread recipe. It is very soft. Healthy substitutions can be added where you wish, it is a very flexible recipe. I usually just make it nice and unhealthy so I can feed it to non-vegans and show them how tasty vegan food can be. 1/2c steel cut oats 2.5c Water Few TBSP coconut oil Cinnamon Nutmeg Stevia Vanilla 1 Banana Insy winsy bit of salt Chuck the coconut oil in a pan, heat on low, then throw your oats in there and roast em. In another pan or kettle boil the water with a smidge of salt then pour it into the oat/coconut mixture stirring well. Bring to a boil if need be for a minute or two then lower to med and cook or 20 min. After 20 min add vanilla, stevia, nutmeg, and 1 banana. Vegenaise + Banannas = Banannaise!!!! mix them up in a blender or food processor and whola!! a condiment so gross it has to be good?? ANYWAY I haven't made this but i just enjoy the word combo, BUTTT the first person who comes up with a good recipe (w pics!) using banannaise will recieve a "Fuck Ya'll I'm From Texas" shirt- so that you can (ironically?) wear it around your town. pics of people eating bannaise sandwhiches (just bread and banannaise) would also be cool!! Recently Ive been going crazy over this root that I had not eaten since I was an 8 year old in Caracas... BATATA!!! It tastes like a cross between an idaho potato, a sweet potato and purple. these things are so good I can even eat em without any seasoning. Just Boil Em up and Dig in. Anyone have a good recipe for barbeque sauce. All the ones I've found at the store have HIGH FRUCTOSE CORN SYRUP as one of the first ingredients and I really try to avoid that crap and yet I love bbq sauce flavor. In fact, I want to do BBQ tofu in the next couple of days.

This is super easy and delicious. Perfect as a tortilla or pita filling, and also great for dipping red and green peppers and zucchini in.. Yummm One can Kidney Beans, drained (or most any other bean, probably not chickpeas though) About a cup of unsalted cashews (I mix almonds in if I'm running low, your choice really) Half to a whole small can of enchilada sauce Add the nuts to your food processor or blender, blend until evenly ground. Add the beans. Blend. Add half the can of sauce. Blend. If its still too dry, add more sauce. Eat. Enjoy. Repeat.

Here are a couple of rootin' tootin' recipes with beans. I am often a lazy cook, so it's nice to have healthy recipes that are fast to fix, like these. "Can-opener bean salad" Mix together 1 can each, drained and rinsed: kidney beans, black beans (or black soy), garbanzo beans, green beans (I use organic). Add I small jar pimentos and/or 1 can artichoke hearts, halved and or/1 small can sliced black olives (drained and rinsed to remove excess salt).
