First day of being vegan, this is what I ate

meal 1: 1/4 cup oats, 1 serving protein powder, 1 banana, 1 cup blueberries

 

meal 2: 1/4 cup pepitas, 5 pitted prunes

 

meal 3: 1/4 cup quinoa, 1 apple, 2 tbsp flax

 

meal 4: 1/4 cup mixed nuts

 

meal 5: smoothie (3/4 cup frozen peaches, 3/4 cup apple juice, 1.5 bananas)

 

meal 6: salad (1 cup iceberg lettuce, 2 tbsp balsamic vinaigrette, 1 tbsp olives, 1 tbsp pepitas, 1 tbsp quinoa), 1 cup beets, 1 cup broccoli

 

post workout shake: 1 serving protein powder, 3 tbsp dextrose

 

 

2,186 calories total

61g fat

349g carbohydrates

91g protein

 

 

feeling pretty good...

Yeah, it's definitely a great start. I follow a different macronutrient ratio, but different people need different things I supposed.

 

When I started being a vegetarian, it was nothing but rice and beans with veggie nuggets, or veggie burgers. Oh, the good old days *cough cough*.
