DV Posted January 5, 2009 Share Posted January 5, 2009 Whole foods, local co-ops and health food stores for miso paste that's worth purchasing. Too much of the miso found in Asian stores (in my experience) has been pasteurized and/or too salty instead of rich in taste. In the U.S., I think Miso Master is the best miso although others are fond of the South River brand (both refrigerated as miso paste should be). The mild, or white, Miso Master has an aged parmesan taste while the South River brand has an undertaste of white wine, IMO. Link to comment Share on other sites More sharing options...
