It was so tasty and simple. 400g can chickpeas/garbanzo beansA good squirt or a few tbsp of vegan mayoSalt & pepperOptional - chopped celery - Mash the chickpeas as much or as little as you like. I left some whole for a bit of texture. - Mix in the mayo, salt and pepper- Done It's good by itself, but this time I had it with some baby spinach and a couple of slices of tomato. Just made the dish above.. with freshly chopped mint leaves it's delicious! I added 4 cups of cooked brown rice to boost the carbs and protein.
