Vegan Food for the first time.

I made this dish for a friend of mine the other night. I was really nervous because I wanted to show him how great Vegan food can taste. It was really hard since I don't cook my food. And it's been months since I cooked for someone.

 

Anyways I give it a shot. Asked him what he likes. The answer I got was anything! Wow okay that narrows it down. So I asked him a lot of questions give him a list of dishes and spices, sauces etc...

 

I found this one in Brendan Braziers book Thrive Fitness

This dish was super easy and quick to make.

 

Coconut Lime Curry Chickpea Stir-Fry

 

1 tbsp of Coconut Oil

1 tbsp of grated ginger

3 cloves of garlic minced

1/2 lg red onion

1 1/2 cups of chopped cauliflower

1 1/2 cups of broccoli

a bunch of baby spinach

1/2 tsp of turmeric, and curry

1/4 tsp cumin, and chili peppers or flakes

1 cup of chickpeas

1 cup of coconut milk

1 tbsp lime juice

1/2 cup of cilantro

For the grain I cooked Quinoa.

 

You can also add more of your favorite veg.

mmm... looks great!

 

I ordered Thrive Fitness from amazon(uk) ages ago and it still hasn't came!! That looks better than nearly everything I've tried out the original thrive diet book so far. The only thing I've took a real liking to is the chocolate blueberry energy bars =]

Aw thanks guys I really appreciate the comments Cooking is so much easier then preparing raw gourmet foods!

 

Mary YES!!! it's worth the read. Brendan goes over diet and a fitness schedule and new recipes.

I haven't red the whole thing, but he's a book of knowledge
