Tasha Posted November 28, 2009 Share Posted November 28, 2009 I made this dish for a friend of mine the other night. I was really nervous because I wanted to show him how great Vegan food can taste. It was really hard since I don't cook my food. And it's been months since I cooked for someone. Anyways I give it a shot. Asked him what he likes. The answer I got was anything! Wow okay that narrows it down. So I asked him a lot of questions give him a list of dishes and spices, sauces etc... I found this one in Brendan Braziers book Thrive FitnessThis dish was super easy and quick to make. Coconut Lime Curry Chickpea Stir-Fry 1 tbsp of Coconut Oil 1 tbsp of grated ginger 3 cloves of garlic minced1/2 lg red onion 1 1/2 cups of chopped cauliflower 1 1/2 cups of broccolia bunch of baby spinach 1/2 tsp of turmeric, and curry1/4 tsp cumin, and chili peppers or flakes1 cup of chickpeas 1 cup of coconut milk 1 tbsp lime juice1/2 cup of cilantro For the grain I cooked Quinoa. That looks better than nearly everything I've tried out the original thrive diet book so far. Mary YES!!! it's worth the read. Brendan goes over diet and a fitness schedule and new recipes.
