Quick and easy...

Lentil Curry with Chickpeas, Tomatoes and Spinach

Ingredients:

2 Cups Red Lentils

1 Medium Red Onion (finely diced)

1 400gram tin Chickpeas

2 Cups chopped English Spinach

3 medium Tomatoes

1 teaspoon Tumeric

1 teaspoon Ground Cummin

1 teaspoon Ground Coriander

I Tablespoons Minced Garlic

1 Tablespoons Minced Ginger

half teaspoon dried vegan stock

half teaspoon mixed spice

12 green cardamon pods

Chilli Powder - (use your discretion) leave this out for no heat, a quarter teaspoon for mild, half for medium, more for hot

2 to 3 Tablespoons Extra Virgin Olive Oil

4 or 5 Cups water

Method:

- Remove seeds from the cardamon pods and crush.

- In a frypan place the oil, onion and all the spices. Stir over heat until spices are aromatic and start to darken.

- Add the lentils and water.

- Add the chopped spinach, tomatoes, and chickpeas.

- Cover and let simmer until lentils are soft. (add more water if it starts to run dry)

Enjoy...

does one need to rinse the Lentils ? if yes, for how long ?

Yes. rinse a couple of times.. thoroughly since there is a possibility of fertilizer, pesticide or some kind of insect repellent.. (as per my mom)

To rise lentils faster use a pressure cooker
