What-ever I had for dinner the night before... make extra and take leftovers!


Mexican chilli-beans in a wholemeal wrap with salad

Veggie patties with hummus and salad

Vegetarian pasta (add chickpeas or lentils to the sauce)

Cous Cous or Quinoa with beans, veg and dried fruit mixed in

Tofu stir-fry with noodles
