He made an awesome homemade hummus topped with pine nuts and roasted eggplant and garlic(baba ghanoush) along with fresh cut veggies for dipping and scooping. Yummy! It was so delicious after my long run in the cold. 2 tablespoons extra virgin olive oil*1 cup chopped yellow onion3 large leeks, white and pale green parts, chopped3 cloves garlic, finely chopped2 teaspoons salt3 medium red potatoes, chopped1 bay leaf4 cups vegetable broth*2 cups rice milk*1 tablespoon chopped dillSalt and pepper to taste Heat oil over medium heat in a large soup pot. Add onions, leeks, garlic and salt and cook for 6 to 8 minutes, or until translucent and softened. Add potatoes, bay leaf, and broth and bring soup to a boil. Reduce heat to medium low, cover, and cook until potatoes are tender, about 35 minutes. Add rice milk and dill and simmer, uncovered, for 5 more minutes. Season with salt and pepper. It was light, tasty, and filling! I know it is not outlandish or inspiring to most but it sure hit the spot for me! Sometimes simplicity tastes so gooood! I hadn't had fish tacos in so long and it was actually amazing full of guac, salsa, cabbage and fake sour cream. The fake fish wasn't too fishy and was just right.
