Synny667
Does anyone have a super simple gluten free bread recipe or recommend gluten free mixes??? It is getting to the season of sandwiches for me. I don't like store bought bread cause it usually tastes funny to me and there are very few that don't put eggs in the bread.
lobsteriffic
The Rudi's brand is vegan. I see it a lot but I haven't tried it. You can go here to see where to buy it in your area: http://www.rudisbakery.com/where-to-buy/ I've done a bit of gluten free baking for cookies and muffins, but not yeasted breads - sorry I'm not more help there. I found a few on the internet, but since I haven't tried them I can't vouch for their success: http://aprovechar.danandsally.com/?p=228http://gingerlemongirl.blogspot.com/2010/09/gluten-free-vegan-crusty-bread-recipe.htmlhttp://glutenfreegoddess.blogspot.com/2009/03/gluten-free-multi-grain-sandwich-bread.html http://www.missionvegan.com/gluten-free-vegan-sandwich-bread/ As with most gluten-free baking, they require a mix of different flours and xantham gum and what-not, so depending on what you have already it might be a bit expensive to acquire all of the ingredients. Synny667
I am starting out with nothing. Have only been eating rice and oats but am missing sandwiches. Plus with hiking season here pb & js work better for on the run
lobsteriffic
Yeah, a lot of gluten free baking is an investment initially, as a mix of flours really works best. Bob's Red Mill makes a pre-mixed bag of gluten-free flours, I don't know how well it works in sandwich bread though.

mtguy1976
My wife and I are GF, here is a good one. http://www.glutenfreecookingschool.com/archives/finally-really-good-sandwich-bread/ I have only cooked it in the oven and not the bread machine. It stays in the fridge for a couple of days, then we freeze it
Synny667
Ok can you explain what xantham gum is for?? And is it really necessary?
vegimator
Xanthan gum is a powerful binder and it is very often necessary in gf vegan baking.

Octopussoir
I have a gluten allergy(skin problems) so I stay away from anything processed(ugh, i love tortilla chips though) and anything even coming close to having gluten. One little bit of gluten or cross contamination and I feel it within minutes and proof is shown. Bob's red mills have lots of gluten free bread, brownie, cookie, etc mixes. Also, Whole Foods/EarthFare should also carry these AND already made gluten-free breads(youll have to look).
