passover vegan diet

So passover is in 2 weeks and I noticed that most of the healthy vegan foods are not allowed to be eaten for 8 days. If anybody celebrates passover, what do you eat to prevent from losing a lot of weight. Allowed to eat nuts (exception peanuts), quinoa, almond butter, sweat potatoes, fruits, most veggies. Please share your diet even if it is raw vegan

 

Here is the list of foods not allowed

Wheat

Oats

Rye

Barley

Spelt

millet

rice

buckwheat

Rice

Corn

Millet

Dried beans and lentils

Peas

Green Beans

Soybeans

Peanuts

Sesame Seeds

Hey,

 

I'm almost a raw vegan haha thanks to some food sensitivities and IBS. I'd do a green smoothie in the morning. Some fruit with some greens.. I think there are some recipes on here for these but the basic one is a couple cups of spinach and 1 banana with some berries and water.

 

For lunch you could do a quinoa pilaf? Or a sweet potato with a salad. Another good lunch is a collard or kale wrap with other veggies and some avocado in there. For supper you could do a squash with some other veggies and some beans, etc. You still have a lot of options! I agree with Fallen_Horse just be creative! You may discover some new veg dish that you love.
