Calzones

Fast and easy, and quite good.

 

Calzones:

 

1 6-8" pita shell

 

4 oz firm tofu (cubed)

1 tablespoon vegan mayonaise

1/4 cup tomato sauce

1/2 tomato (cut into small cubes)

1/4 teaspoon dried basil

ground pepper (to taste)

 

Mix the above together and spread mixture on pita shell and

bake (open faced) at 350 F (10 minutes in a toaster oven) until pita shell is crispy and toppings are hot. Remove from oven, fold over, and enjoy!
