I made this the other day & it was awesome!!! 2 cups water 1 cup brown rice (I used white to use up the last bit I had) 1 1/4 cup of soy milk (I used light vanilla soy milk) 1/3 cup of raisins (I didn't use) 1/3 cup of brown rice syrup or maple syrup 1 teaspoon vanilla 1/2 teaspoon cinnamon 1/4 teaspoon ginger (I did not use) 1/8 teaspoon ground nutmeg In a medium saucepan, place the water & bring to a boil. Add the rice, cover,reduce the heat to low & simmer for 35min or until done. Add all the ingredients, stir well & continue to cook the mixture over low heat until all of the liquid has been absorbed. Transfer the mixture to a bowl & place in the fride to chill. Top with addtional cinnamon if desired. I also added a bit more soy milk when I ate mine. My boyfriend loved it too!!!
