  1. I've been lacking motivation, too. It's been cold here as well, so maybe that does have something to do with it. Stay healthy!! -Karen
  2. Hey there, Nathaniel! Great job in consistency of your journal! I'm sorry to hear you've hit a bit of a rough patch recently with your housing situation, but it sounds like it got resolved quickly enough. Seems like you're staying pretty conscious of your food and exercise (which sometimes seems to be half the battle!) and trying to make good decisions in terms of resisting certain foods and incorporating more fitness. Great! Hope everything went well with the move and that you'll be settled into your new place in no time. Hang in there! All the best, Karen
  3. Hey George! I am also admiring your journal and love your little gems of wisdom! "Today is a new day and now is a new moment." Looks like your wife is coming up with some awesome recipes: stuffed peppers, risotto w/ chick peas! Yes, please! And I'm sooooooo jealous of your VitaMix. *sigh* Keep up the awesome work! All the best, Karen
  4. Split pea soup with tempeh sounds delish!! Did you make the soup yourself?
  5. Yes, as posted above, Engine 2 is brilliant. And watch the film "Forks Over Knives" and have anyone who questions you watch it as well! It has changed tons of people's lives and minds about food!! You can buy it from www.forksoverknives.com, Amazon.com, or watch it on Netflix. Vegan is the way to be! Go for it, and don't be ashamed!! All the best, Karen
  6. Hey there! Keep up the great work in journaling! Makes me hungry just reading it! Haha!
  7. Hey Miz! Good job on finding some exercises to do at home, since you won't have gym access! And great job on your consistency in journaling and being mindful of exercise and food! Keep up the great work! All the best, Karen
  8. Hey there! Glad you're feeling better, and hope you're back at it soon! All the best, Karen
  9. Hey there! I'm still so impressed by your journaling! You're so consistent in excercise, despite your injury, and that's really inspirational! Keep at it!!! -Karen
  10. Hey Mr. Adam! Nice work on your journal, consistency in working out, etc.! You mentioned you're a very new vegan.... How's that part going for you? Keep up the awesome work! All the best, Karen
  11. Hey Joe! Looks like you're having lots of fun and being consistent! NICE! Don't you love this warm winter we're having?? I'm in Colorado, and we've been in the 50s a lot lately as well. It's been weird! Glad you took advantage and got outside! Keep up the awesome work! And keep having fun! All the best, Karen
  12. Yep, Robert! Copied the dancing around straight out of Miguel's playbook. Haha, Doug! It's been a couple days since I've actually been cream crackered! I'm overdue! Thanks, Amanda! I checked out a Zumba DVD the other day, but it was way over my head! I'm sooooo uncoordinated.... which is why I don't dance! Haha! Thanks for the encouragement, and maybe we can have a phone chat soon? I'm in need of some catching up and advice. ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ Today my "workout" consisted of 5 hours of housework for my friend. Perhaps not the toughest cardio ever in the history of the world, but lots of tough work nonetheless! I wasn't officially 'cream crackered' per se, but quite exhausted nonetheless! Breakfast: Grapefruit Sprouted multi-grain bread with some peanut butter Lunch: (I didn't make it for myself, so it's not what I would have ideally put on it, but...) Sandwich with lettuce, tomato, Tofutti cream "cheese", Vegenaise, 2 garlic stuffed olives and some pickled okra Dinner: Corn tortillas with pinto beans, spinach, tomato, green onion, salsa, and avocado Snacks: Apple Whole wheat crackers Soy latte (coffee with a friend)
  13. Hey Bart! Keep up the awesome work in exercise and yummy food!!! Thanks for the cookbook suggestion, by the way. I'll have to check that out! -Karen
  14. Hi Sherrie! Oh my gosh, I just saw your posts about not getting feedback and feeling like no one is reading your journal! So sorry if you're feeling discouraged. I'm clicking the box to be notified when you post, so that I can keep tabs on you. I am just getting into fitness myself and participating in the January challenge, so I may not have tons of answers for you in regard to some of your questions. But, I have been vegan for a couple years, so if I can help you in any way, feel free to reach out to me! Regarding vegan yogurt, sounds like you found an alternative to dairy that you like. I also like soy yogurt and almond yogurt. Mmm... You've had remarkable consistency in working out and journaling, and that's really inspiring to see! And I LOVE the fact that you said you're "jazzed" to start this! I use that expression all the time. I'll check back on you soon! All the best, Karen
  15. Hey Miguel! So proud of you for walking that mile! Awesome work! OH, and I borrowed one of your moves yesterday by dancing around my living room for 15 minutes to get a little cardio in. Thanks for the great idea.
  16. Rest day. Feeling kind of off-kilter. Spent 15 minutes "dancing" around the living room and did a few crunches and push-ups. Breakfast: green smoothie with Vega and flax Lunch: black bean soup and soy yogurt Dinner: salad and a rice/bean/tempeh/veggie dish I made, which was pretty damn delicious, if I do say so myself. Snacks: whole wheat crackers, radishes, airpopped popcorn
  17. Hey Kane! Your journal is impressive and inspiring! Keep up the awesome work! Hope your leg is back to perfect in no time! All the best, Karen
  18. Welcome to the VBB forum, Leslie! I like your style! All the best in your transition to full-fledged vegan! -Karen
  19. Hi Martin! Welcome to the VBB community, and to the vegan lifestyle! I sincerely hope you will give it a sincere try. Reading through your into, I was going to suggest you watch "Forks Over Knives", but it looks like you've already done that! What did you think of it? There is also a companion book to the film, which has lots of healthy recipes. I also recommend the book Engine 2 Diet, which is written by Rip Esselstyn (also featured in "Forks Over Knives"). Those will be great resources for you. I haven't read it myself, to be fair, but I've heard over and over and over again great things about the book Thrive: The Vegan Nutrition Guide to Optimal Performance in Sports and Life by Brendan Brazier, professional Ironman triathlete. Hope that helps you some, and I wish you the very best with this new lifestyle! It's the way to go, for sure! Truly, Karen
  20. Welcome to the VBB community, Dawn!
