julia
your waffles look so great all the time! do you have a recipe or could you tell me approximately what you use? Mine always turn out very soft, and although I do like them soft, every now and then I'd love to have a crispier one.. I don't put any fat into the dough, just spray the waffle iron with a bit of oil, maybe that's the reason?

Vegan Joe
your waffles look so great all the time! do you have a recipe or could you tell me approximately what you use? Mine always turn out very soft, and although I do like them soft, every now and then I'd love to have a crispier one.. I don't put any fat into the dough, just spray the waffle iron with a bit of oil, maybe that's the reason? I mostly use oil, depending on the flours they can get chewier without it. I always just throw some ingredients together rarely measuring. Getting better with time on guestamations. From some of my earlier waffle pics Brunch:Waffle of wheat, buckwheat, amaranth, olive oil, cinnamon, baking powder, salt, water.Tapioca, millet, amaranth and wheat flours Wheat gluten, millet, and brown rice flour, with 2 Tbls of olive oil. Wheat gluten, buckwheat flour. teff flour. Made waffles without oil except for Pam spray on iron. Waffle:Wheat gluten, tapioca flour, amaranth flour, baking powder, salt, olive oil, water, Pam cooking spray for waffle iron. More of the same. This make an excellent tasting waffle:Wheat gluten, tapioca flour, and amaranth flour. Tapioca/Teff waffles

Vegan Joe
Thank you MaryStella! I must confess Julia, that I really want to make my waffles with yeast instead of baking powder. I have on occasion but getting the water the right temperature always seem like a daunting task. I need a digital thermometer, so if someone would please send a digital thermometer to ... .I need to look around. 223.6 lbs at 7:00 pm, before eat and drink. Worked in the garden. Weighed 227.8 on Sunday I think. 6 feet of planted pole beans from east to west yielded this many pods (plus the green ones I ate in the beginning of the season). Plastic dish pan.Actually there was more that I forgot in my apron pockets. http://i52.tinypic.com/2a7dand.jpg
