Ingredients:1 cup of organic whole wheat pastry flour (or white)1/4 cup of chopped almonds1/4 cup of quartered dried black cherries1 chopped bar of chocolate (Chocolove makes a Cherry Almond Bar that goes well with the cookie)1/2 tsp of salt1/2 tsp of baking soda1/2 cup of organic sugar1/2 cup of Earth Balance Buttery Spread1/3 - 1/2 cup of oats1/2 tsp of cinnamon Pre-heat oven to 365 degrees. Combine room temperature Earth Balance with sugar and mix. Combine flour, oats, salt, baking soda, and cinnamon separately. Mix the two using your clean hands. Add chocolate, almonds and black cherries and combine completely. Make little balls and squish to 2 inch rounds. Bake for 10-12 minutes. I usually let the dough sit for 30 minutes to an hour because I like a relatively flat, crispy cookie. Enjoy. Link to comment Share on other sites More sharing options...
