Black Cherry Almond Chocolate Chip Cookies

I regularly make these for my nonvegan friends.

 

Ingredients:

1 cup of organic whole wheat pastry flour (or white)

1/4 cup of chopped almonds

1/4 cup of quartered dried black cherries

1 chopped bar of chocolate (Chocolove makes a Cherry Almond Bar that goes well with the cookie)

1/2 tsp of salt

1/2 tsp of baking soda

1/2 cup of organic sugar

1/2 cup of Earth Balance Buttery Spread

1/3 - 1/2 cup of oats

1/2 tsp of cinnamon

 

Pre-heat oven to 365 degrees. Combine room temperature Earth Balance with sugar and mix. Combine flour, oats, salt, baking soda, and cinnamon separately. Mix the two using your clean hands. Add chocolate, almonds and black cherries and combine completely. Make little balls and squish to 2 inch rounds. Bake for 10-12 minutes. I usually let the dough sit for 30 minutes to an hour because I like a relatively flat, crispy cookie. Enjoy.
