I am assuming you are talking about raw carrots, so there is some more here:

http://www.living-foods.com/recipes/

raw tahini dip:

2/3 cup tahini

1cup water

1/4 cup lemon or orange juice

1 clove garlic, minced or 1/4 tsp. garlic power

1/4 parsley chopped

1 tsp sea salt

pinch of cayenne

Also you can shread the carrots & celery and mix with one of the dips or nayonaise for a cole slaw.

  • 2 weeks later...

You could also put hummus on them. My favorite hummus is:

1 can chickpeas almost drained

1 - 2 tsps of olive oil

lots of lemon juice

pepper

garlic

paprika

creole spices (make certain they're vegan)

Put all ingredients in a blender and blend until smooth.

It's very good, but not for every day.

Hey that's pretty good. Half the price of just buying it premade. Thanks.

In addition to the above suggestions, how about widening your repertoire of veggie " sticks" to include red pepper, jicama, sliced cucumber, etc. Then a few celery and carrots amonst all the rest won't taste so blah.

Or instead of just dipping the celery in the spreads, fill the cavity of the celery with them. (sometimes the same ingredients in a different presentation or form seem more exciting!)

In Girl Scouts, we used to make "bugs on a log" (which we in error called " bumps on a log" ): celery sticks with p.b. on and a few raisins (the ''bugs').
