Just on that day, there were 3 festivals going on, then that night I had dinner with about 20 other vegans, then about 10 of us went out to get vegan soft serve from Blossoming Lotus. It's like a Vegan Paradise out here! In fact, just this summer 3 more ALL VEGAN Restuarants opened up. So you can't get vegetarian stuff even if you wanted, no cheese, milk, eggs, etc. allowed I'm all about encouraging and helping others strengthen their own vegan communities, but I'm also welcoming others to Portland There are lots of great vegan places around and Portland is just one of them. That place rules too. It's like this little town and they keep all the huge corporations like Wal-Mart and starbucks on the outskirts. I LOVE IT!!
