mac and cheese

i dont think i need to point out which ingredients should actually be vegan or not, since i'm sure your used to cooking with them

 

Ingredients

* 2 tbsp flour

* 1/4 tsp salt

* 1/8 tsp dry mustard (optional)

* 1/8 tsp pepper

* 2 cups unsweetened soy milk

* 2 tbsp Margarine or vegan butter

* 8 oz cheese(cheddar) i use 10 but its supposed to have 8 (if you can find a vegan sharp cheese, by all means use it, it tastes a lot better)

* 8 oz macaroni noodles

Preparation

* boil macaroni till soft

* In saucepan combine flour, salt, dry mustard and pepper; stir in milk.

* Add margarine.

* Stirring constantly, bring to a boil over medium-high heat and boil 1 minute.

* Remove from heat.

* Stir in cheese until melted.

* Add elbows.

* Pour into 2-quart casserole.

* when i make it, i usually double the recipe(and if using 10 ozs of cheese, you'll probably want to add more noodles, maybe around 20 ozs total), so i end up splitting it up and freezing some of it, it saves pretty well, and recooks just as nicely

* Bake uncovered in 375 degree oven 25 minutes, if frozen, you'll want to thaw completely or you'll end up having to bake it for more than an hour(depending on how much you have frozen), just check on it

I've tried numerous vegan mac-n-cheese recipes and hate all of them that rely on too much nutritional yeast or processed vegan cheese. The best recipe I've had is from the Real Food Daily Cookbook. For extra tanginess, I sometimes add mild, white miso paste as well. It turns out like true diner-style mac-n-cheese vs. the kraft-from-a-box stuff many of us grew up with.
