Scrambled Jamaican breakfast tofu

Ok. I actually had what a restaurant here in chicago called a jamaican omellete.

 

I tweaked it because I like my eggs(tofu) scrambled. But I kept the rest of the ingredients.

 

3/4 tsp olive oil

handful of walnuts

1 banana smashed

2 tbls honey(scratch that- use agave or maple syrup !)

1/4 package silken tofu. Drained and mashed.

 

Heat olive oil and stir in tofu. Reduce heat and add the banana,honey and walnuts. Stir, simmer until heated through.

 

Yum!
