kailla
well, reubens have always been my favorite food of all time, so this recipe is really great. I love it more than the meat version! Avocado Reuben 2 slices rye breadbrown mustardThousand Island dressing (recipe follows)1/2 avocado, pitted, peeled, and mashed1/4 cup sauerkraut Place the bread slices in a lightly oiled skillet with some salt & pepper. grill both sides. Spread one slice of bread with some mustard, the other slice with Thousand Island dressing. Top one slice with avocado, and the other with sauerkraut. Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together Thousand Island Dressing 1 cup vegan mayonnaise 1/3 cup ketchup 1/2 tsp. onion powder 1/4 tsp. salt 1/8 tsp. garlic powder 3 Tbsp. sweet pickle relish 2 Tbsp. brown mustard
loveliberate
Thanks for the recipe! There are dozens of places around Cascadia that serve vegan reubens but they tend to use tempeh - I've never seen anyone use avocado.
