I have an "optimal" conception of a particular raw, low-fat vegan diet I strive for, but never completely reach 100% of the time. It's kind of like meditation, when your mind wonders you just gently bring it back; it's a continuous striving, not quite being the ideal, enjoying the huge benefits of what you have reached, and being happy with a substantial level of excellence. One thing I would point out too though, is that those of us with a chronic health issue and probably many older people, have less capacity to deviate from the ideal.
