Patrik Posted May 19, 2009 Share Posted May 19, 2009 Hello, when reading about the protein content of sprouts I get confused. Some sources say that sprouts have a very high amounts of protein. For example; mung beans are said to 23,86 grams of protein per 100 grams here http://en.wikipedia.org/wiki/Mung_bean but if you look at this site http://www.nutritiondata.com/facts/vegetables-and-vegetable-products/2333/2it says it only has 3 grams per 100 grams. Jason Posted May 19, 2009 Share Posted May 19, 2009 I think the 23 grams of protein is just for 100 grams of unsprouted seed.The nutritiondata number is for sprouted, raw seeds.Sprouted seeds contain a lot of water.100 grams of unsprouted seeds contains 350 calories and 23 grams of protein100 grams of sprouted seeds have 31 calories and 3 grams of protein and a lot of water.
