vital wheat gluten

Recommended Posts

It is a big source of "protein" but I can't help but believe that it has a poor amino acid profile. Does anyone know what the amino acid breakdown is?

Even wheat in general, like in bread, pasta, or cereal, usually has decently high protein totals. I just doubt wheat gluten has any real protein value. Does anyone know otherwise? Thanks.
