EatRaw Posted November 29, 2006 Share Posted November 29, 2006 Hi guys,I found this recipe online and just want to share. It is amazing!! It is definitely the best chili I have ever had. Ingredients:2 carrots2 stalks celery1 large red bell pepper1/4 - 1/2 onion1/8 - 1/4 cup olive oilSea SaltCorn (As much as you like)2 tomatoes1 avocadoChili PowderCayenne PepperBlack PepperJalapeno (Optional - If you like it hot ) Combine carrots, celery, bell pepper and onion in food processor. Add Olive oil and a little sea salt. Add corn in by hand. Put aside. To make the sauce. combine tomatoes, avocado and jalapeno in food processor. Add chili powder, cayenne pepper, black pepper and sea salt to taste. I use a lot of chili powder - a couple tablespoons. I also throw in cumin or a Mexican seasonings blend sometimes. Just keep adding until you get the flavor you like. Mix veggies with chili sauce and warm slightly. I warm mine in the dehydrator in plastic baggies. If you warm in a pot, use very low heat and stir often. The chili also tastes great cold or just at room temp. Hope you guys enjoy this as much as we do.
