Today 4 years a vegan, started out as just a dietary vegan but have come a long way baby

Lets see, that's a little over 400 animals saved (@ 6'2" that a little larger than the average).

A menagerie with a milking cow or two, a steer, and a calf or two, a few pig, maybe a whole lamb, plenty of chickens and their need to produce infertile eggs, couple of turkeys and ducks, I like geese too (well use to like to eat them) throw in some whale, seal, reindeer, walrus, and some moose . A huge aquarium with fish, crustaceans, and mollusks. I know there is some other animals I am indirectly responsible for saving. Cause I realize the reverse is also true. Well that's enough happy to get me through the day.

Started the day eating out at a place that serves tofu scramble.

Went to this place

http://www.kokilaskitchenonline.com/home.html

and was very sad they had close the doors for good without even a sign in the door. Their menu as 70% or better vegan food West Indian style. Bummed me out, wifey and I were their like just three weeks ago.

So we went here: Went before but never ate, always got there too late and the wait time was too much.

Hey what's in that mock tuna salad? Looks pretty good.

I use a little food processor.

and start with some lemon juice, relish, chopped onion, chopped celery, veganaise, mustard, nutritional yeast,, garbanzo beans. their are several recipes out there I first learn to make if from this recipe ( I like more lemon juice, and just squeeze the whole lemon)

This is that:

Mock Tuna Salad

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

-----------------------------------------------------

2 cans of garbanzo beans, drained

1 tbsp lemon juice

4 tbsp Veganaise, to taste

5 tbsp pickle relish, to taste

2 tbsp nutritional yeast flakes

3/4 cup finely chopped onion

Instructions:

-----------------------------------------------------

Place all of the ingredients except the onion and pickle relish into a food processor and process until it reaches the desired texture (you probably don't want it too smooth). Then stir in the onion and pickle relish. Refrigerate.

Hey guess what! After applying on a million jobs (okay not quite a million, but feels like it!) I finally landed a phone interview with Adobe for a position in San Jose. Wish me luck!

That's close enough to Stanford.

Hoping and praying things go your way!
