My husband used to LOVE spinach enchiladas, so I came up with this recipe & made them yesterday. They rock! BTW, I decided to make my own enchilada sauce cuz they were $3 per 15 ounce can!! Gasp! Lupita’s Cheezy Spinach/Onion Enchiladas – makes approx 20 enchiladas 1 batch of Cheeze Sauce 1 tub regular tofu, drained, pressed & cut into small chunks ½ pound fresh spinach, chopped (food processor works well) 1 small onion, diced 4 -5 cups red enchilada sauce Corn tortillas – not the kind that are already fried. These are soft & pliable. Cheddar & mozzarella vegan cheese, grated In a blender, make the cheeze sauce. Add the tofu a few chunks at a time,…

I tried to make some chocolate pancakes, turned out to be nice and quite filling. Recipe: Throw some chocolate soy mik in a bowl, add a teaspoon of baking soda, add some olive oil, add some flour and stir it. Keep adding flour until it looks like pancake batter. Now just put a little bit of oil in a frying pan, then add some batter and behold the beautifull chocolaty creation that appeared. Also you might want to turn it every now and then. http://i14.photobucket.com/albums/a301/gymhater/food/IMGP9758.jpg

My birthday will be celebrated this weekend and I have gotten my wish of a vegan meal and cake this year (I had to bargain to do it ! ) My problem is that all of my family members are omnis, who do not want nor will eat anything with tofu. I have played around with a vegan moussaka recipe or do you think it would be better to have a vegan lasagna without the cheez or tofu ? Instead of the tofu I could sub a white beshemel sauce (or does that sound gross ?) Please advise. VEGAN MOUSSAKA: ingredients: 3 eggplants (or 1 eggplant, and two zucchini) 2 lbs of mashed potatoes 2 onions, chopped 1 clove garlic, minced ½ tsp nutmeg 2 TBSP parsley 1 eight oz. can of tomat…

This one is for our master chefs like "Tiff and associates" Do you like any of these herbs? What types of dishes might you use each one named above in? What do you they taste like? They always look so nice in the organic produce section but I am scared to get some because I have no idea what dishes to make with them and what they would taste like. herbs can be quite expensive, no? Thanks!

Here are some excellent raw alternatives for your table this Thanksgiving. I definitely recommend experimenting with these dishes a few times before you debut them on your families table. Some require overnight preparation and may seem a bit tedious; they are however worth the effort. Enjoy!! Mock Mashed Potatoes: 1 head Cauliflower chopped up into chunks 1 cup (?) soaked Pine Nuts Olive Oil Sea Salt to taste I don't use it, but some prefer it. Blend all in food processor, adding oil in as a drizzle until you get the right consistency. This is surprisingly delicious! You might need to make a double batch, because you'll find yourself eating so much before Thanks…

My company is hosting an Open House and since you guys were so great in making suggestions for VM's birthday, any suggestions for the Open House would be appreciated. Pirate theme, finger foods/snacks and drinks including ideas for the Adult Beverages we will be serving. I don't mind cooking, but work long hours 6 and sometimes 7 days per week, plus fitting in workouts (yes, I never get out), so anything quick is better.

yo, i´ ll try to translate my recipe into english... i hope you ´ll understand it! mix 1 cup oatflakes ( i read one cup is 250 g, so it should be 250 g) 5-6 tablespoons of protein powder 2 teaspoons of baking powder some cacao powder then add some water or soy milk, until you have a dough like consistency. After that you add some sweetener... you know, this artificial crap then add what you want! Almonds, an apple, a banana, raisins.... something you think its tasty... And now you put the dough into little muffin pans.... Bake it until you think its ready.. usually i bake it up to 15 minutes... so. its cheap, rich of good carbohydrates and rich of protein.…

Last night Topher and I decided to try to make our own mac and 'cheese', but we didn't know how.....I remember seeing a cheese recipe on the forum, but when I went back and read it I wasn't sure if it would be right for mac and cheese so we went on an internet hunt for ideas.... This is what we came up with! 1/4c Tahini 2c water 3T lemon juice 1/2c nutritional yeast 1/3 quick oats 1T onion powder -Blend all ingredients on high for one minute -pour into saucepan and cook on med until thickened It was super easy, I dumped everything in the blender, then into a saucepan, Topher cooked the noodles, then we combined! It turned out really good! Except - I think it's maybe su…

I made this up when I was half asleep this morning and trying to figure out what to make with the chocolate rice milk that my kids don't like, so no photos yet, and the measurements may not be precise. 1 1/2 bananas, cut into 1" pieces and frozen 1 cup chocolate rice milk (or soy, almond, whatever) 1/4 cup hemp seed heaping spoonful carob powder vegan sweetener of choice, to taste (I didn't use any) Put hemp seed and part of rice milk in blender, liquefy. Add remainder of rice milk, the carob powder, and the frozen banana chunks. Blend until it looks like a chocolate shake. Enjoy, like a chocolate shake.

Hi guys! I think I've announced it in like 300 different posts, but if somehow you missed it....my birthday is this Saturday! (I turn 22 on the 22nd ) I'm going home for my birthday, and the only thing I've asked for is a homecooked meal, cuz my mom is an AMAZING cook. She's not so knowledgeable with vegan cooking though. I know I want gnocchi, cuz that's my faaaaaaavorite food, but I just found out my formerly favorite sauce for them has butter in it, and my mom says it wouldn't good right with olive oil or other replacement So does anyone have any sauce suggestions? THEN - the MOST important part! DESSERT!!!!! I have very few vegan dessert recipes and I do…

Hey, I hate seeds, but I know they're meant to be so good for you. I just now found a way to make them actually enjoyable. I dunno what to call it, but I think it's awesome. 6 x tablespoons of flax seeds 1 x tablespoon of cocoa powder 1 x tablespoon of brown sugar 1 x tablespoon of peanut butter Put it all into a blender / grinder. Grind it all until it is like a gritty powder. I then eat it with soy milk, almost like a chocolate cereal. I dunno if other people hate seeds as much as me, but this seems like a pretty good way to deal with them. What do you think?

I did some experimenting in the kitchen. I just took some noodles from a package, and boiled them for 2 minutes until they were soft and ready(like it said on the package). While I was preparing the noodles I took a wok and put about half a cup of olive oil in it. I then started stirfying a bunch of vegetables(onions, paprika's, and some of which I don't know the name). When the noodles where done I mixed them with the vegetables in the wok, and I stirfryed a little longer. During this stirfrying I added some powders, like chilli powder and some other ones. After 2 minutes or so I had a delicious plate of vegan noodles with vegetables(and a lot of olive oil drippin…

I got this out of the news paper last year. It is good. I don’t like stuffing, so I left that part out. TRY THIS! I love the gravy Brenda Rose's Not-Turkey Roast Makes 6 servings • 2 tablespoons olive oil • 1/2 large onion, diced • 4 cups sliced white mushrooms • 1/2 cup sliced wild mushrooms (such as chanterelles or shiitakes) • 1/2 large Granny Smith apple, cored and chopped (peeling not necessary) • 1 pound chicken-flavored seitan, drained and sliced (see note) • 1/2 cup ThanksVegan Gravy (see accompanying recipe • 2 cups Jeanne's Vegetarian Apple-Walnut Stuffing (see accompanying recipe) • 4 sheets frozen filo dough, thawed • 1 tablespoon margarin…

Ohh I bet some of you came thinking there would be a wonderful spaghetti recipe. There is not... however I offer the spaghetti squash. It is not a cheap vegetable option for real spaghetti since it cost 1.50 a lb and this squash was 3 lbs, but it is a little crunchy slightly sweet, and is a good serving of veggie nutrients and is low carb for those who care. I've been wanting to try one and now i bought one. Its easy to cook. Pop it in the microwave for about 8 minutes. It will look a little dry but just scrape it witha fork and you will get all those strands, and there are a lot! I must add that before you cook it though scrape out the seeds and all that loose st…

This weekend I'm going to attempt to bake some protien powder choco-chip cookies -- at the request of my husband. My regular choco chip recipe calls for 2 1/4 cups flour so I'm going to use 1 cup protien powder with 1 1/4 cups flour instead. UNLESS, someone here has a better suggestion. ??? I'm also going to try veganmadre's white garlic sauce on pizza, if I can find some vegan mozz cheeze.
