Lentil Shepherd's Pie is amazing,however - given you like lentils, peas, carrots and mashed potatoes. Yummy Yummy! (Pardon the lack of Pictures - I will add them to this thread tonight) Lentil Shepherd's Pie 2 tbsp vegetable oil3/4 cup diced onions1 clove of garlic, minced2 tbsp flour1 1/3 cup veggie broth1/4 teas. dried thyme1/8 teas. salt1/8 teas. pepper2 cups cooked lentilsOne 10oz package frozen peas/carrots (or whatever veggies you like - feel free to sub fresh veggies but be sure to "slightly" cook them prior to using)2 cups mashed potatoes (homemade are obviously BEST but instant made with soymilk (PLAIN) and marg. are fine as well) 1. Preheat Oven to 350 2. In a 1 1/2 quart saucepan, heat the oil over medium high heat and saute the onions/garlic until soft (approx. 5 minutes). Add flour to make a rouge. Once flour is absorbed, add the veggie broth, thyme, salt and pepper. Bring to a boil and then add the lentils and veggies. Continue cooking for an additional minute. Scoop mixture into a 9x5x3 loaf pan. 3. Pipe potatoes around pan. I do not do this. I scoop potatoes on top and then level with a spatula. If you are going for presentation, you could place mashed potatoes into a pastry bag, etc....But, if you are really going for presentation, you probably know all of this. 4. The version I make has sun dried tomatoes in the lentil mixture and I make a mushroom gravy with red wine mmm.....Only my oldest daughter will eat it especially with the gravy. the other two only like the mash potato as long as the lentils don't touch it!Lisa Link to comment Share on other sites More sharing options...
