veganmadre
My picture guide to making yummy vegan sushi.... First - Inspect and Respect Your Produce http://img153.imageshack.us/img153/5081/sushi14ds.jpg Sushi Preparation: 1. Cook Two Cups Dry CALROSE rice per package directions. Allow to FULLY cool before using (approx 1 hour) 2. Mix 1/3 cup seasoned rice vinegar with 1 1/2 TBSP dry sweetener and 1 tsp salt (the bottle will likely say that you do not need to add the sweetener and salt - DO IT ANYWAY! IT makes a world of difference)Heat over low heat to completely dissolve sweetener. Allow mixture to FULLY cool. 3. Slice Veggies Lengthwise and THIN....save Avocado for last as it will brown as it oxidizes. http://img153.imageshack.us/img153/5757/sushi27wx.jpg 4. After rice and rice vinegar are COOL - no...geez...as in not Hot, mix together in a NONMETAL bowl with a WOODEN spoon. 5. Cut ROASTED/TOASTED (look for this, it's important!) Nori in half and place "rough side" up on a bamboo mat. 6. Follow Pictures Below: http://img296.imageshack.us/img296/8650/sushi36ag.jpg http://img296.imageshack.us/img296/7088/sushi46va.jpg http://img296.imageshack.us/img296/8595/sushi59tr.jpg http://img296.imageshack.us/img296/9841/sushi69im.jpg http://img296.imageshack.us/img296/1384/sushi7zd.jpg WRAP TIGHTLY IN BAMBOO MAT AND LEAVE FOR APPROX. 1 MINUTE http://img296.imageshack.us/img296/8429/sushi73xm.jpg http://img296.imageshack.us/img296/48/sushi88vp.jpg ENJOY! I made Cashew Maki - Avocado, Cucumber and topped with crushed cashew nuts....Anything goes, really. Serve with soy sauce - my favorite by far is Kimlan brand - it's not officialy a Japanese soy sauce (It's from Taiwan) but it is THE BEST!

Renecarol25
on a totally urelated note - my daughter and I made a birthday cake for me. It turned out really good... I haven't had cake in ages. I was terrified to try. Someone made my daughter a vegan cookie (cake thingy) for her birthday that was good. They used Ener-G egg replacer - that's what we used with my cake. I was inspired after the Veggie Fest to try some vegan baking:)

Daywalker
I use to be a great cook when I ate animals . Now I want to be a better cook with VEGANISM! Really? Interesting, i thought one who was a good cook should be a good cook when turning vegan? For me it was the other way round: i could do nothing but a steak in the pan and pasta or rice to that... but i have learned to cook since becoming vegan. Only the baking i leave to more talented people
veganmadre
Really? Interesting, i thought one who was a good cook should be a good cook when turning vegan? Not necessarily so. The main problem is that we live in a world completely consumed with JUNK FOOD. I grew up on a meat and potatoes diet. When I turned vegetarian at 17 (vegan at 18 ), I didn't even know how to prepare vegetables! So, I went from a highly processed meat-based diet to a highly processed meat-free diet. I was afraid of most veggies - having not been exposed to them - and knew "for sure" that I would probably "Hate" them unless they were covered in butter/cheese/whatever. Cooking really great vegan food can be challenging at first because the flavors are new and it's difficult to "improvise". For me it was the other way round: i could do nothing but a steak in the pan and pasta or rice to that... but i have learned to cook since becoming vegan. Veganism also taught me to experiment. As a vegan, I tried sushi and tempura for the first time. As a vegan I learned that my absolute favorite cuisine on the face of the earth is Ethiopian. As a vegan, I learned about 50 ways to prepare a potato. Keep trying compassionategirl, all of the sudden, you'll find your own. You'll discover the spices that you love - whether it be garlic, curry, paprika, cumin, thyme...
chesty leroux
I'm gonna be veg for 3 years in march and im am starting to get better at cooking. Finally. haha. You have to change your whole way of thinking about food and meals. Cause i was raised like alot of people with meat being the main course of the meal and everything else was secondary. One of my goals is to start trying out some more recipes. Your cooking looks awesome veganmadre.

robert
Hey VeganMadre, Check this out. We made these aprons specifically for our movie but I'll be making more for the website Products page: http://www.veganbodybuilding.com/imgs/albums/VeganFitnessTeam/vft14.jpg You'll totally have to get one I think I actually have one left that is black with white text. The rest were given to the actors in the film: Vegan Fitness - Built Naturally, which will be coming out in November. -Robert
veganmadre
First off, thank you all for your wonderfully kind comments! And no, I am not going to culinary school. I just LOVE food and everything else culinary - it's my artisitic outlet. Thanks Robert - I'll totally buy an apron. Lemme know if you have the black one because that'd probably be my first choice of colors. Thanks again for your compliments! I've been lazy lately and haven't made more than veggiedogs and cereal but, I'll post more as the inspiration hits!
Corey
Your sushi looks awesome. I love cooking, but have yet to endeavour into sushi-making, though I definitely eat it enough. I'm going to try it this week, especially because if you're making your own, the vegan combinations are virtually endless. If it comes out well, I'll post pictures. If it doesn't, I'll just eat it. compassionategirl
Hey Corey! Actually, I just remembered that you are the other great chef on this board!!! Between your and vegan madre's fab vegan dishes, honestly, why would anybody even want to eat dead animals? I know I sound like a broken record, but it is so true. Glad to have you back and lookin forward to some more recipes from you when you get the chance!
brendan
I concur. Veganmadre, we are not worthy. Posting pictures was an awesome idea, and just think of all the cool fillings you can throw in there: vegan cream cheese, seitan, tofu, etc., etc. Thanks, dude! What other cool fillings can y'all think of?
