amiracle
question...what kind of coconut milk do you use? I was trying to find recipes to use chia seeds in and came across a pudding recipe similar to this (although your's looks better!). I've never used coconut milk and wasn't sure which "flavor" to buy. Thanks!
Mufflon
Coconut milk comes in flavors? Maybe you mean coconut water?
amiracle
I don't know why...but I was thinking of coconut milk (as in almond milk, soy milk, etc), which comes in the unsweetened or vanilla. But today, as I was shopping at whole foods what you meant. I'm crazy. haha
Mufflon
Lol, I was on the edge of getting jealous already. Vanilla-coconut-milk... I have to experiment with flavors I guess.
C.O.
I actually did use vanilla flavored coconut milk from trader joes when I made this. I loved it because I have a sweet tooth but it was too sweet for my gf so next batch I am going with the unsweetened.
SMcVicker91
tried this today with 2 tbsp of cocoa with unsweetened coconut milk and a hint of vanilla. the taste was great, the texture... not so much. quite lumpy and stringy, but still very satisfying. I'm going to try vanilla tomorrow.
J_Alt
If you don't like the texture, try putting it in the freezer for 1.5 to 2 hours. That's the way I eat it
muchidna
perhaps you could try grinding half the seeds for a different texture?
Fallen_Horse
Chef John from Food Wishes did a chia pudding recently. His videos have a nice flair, and the recipe looks good! http://foodwishes.blogspot.com/2013/09/chia-chocolate-pudding-sort-of-pet.html
