Cucumber & Avocado salad + Good Day Peach Soup

Cucumber & Avocado Salad

 

 

Ingredients:

 

1 cucumber

1 avocado

1-2 tomatoes

lettuce (optional)

sprouts (prefer. sunflower sprouts, optional)

dash of dill

raw tahini, pesto, or miso (which ever you'd like to toss in)

 

 

 

Recipe:

 

Dice cucumber, tomatoes, and avocado.

Chop up the sunflower sprouts if you like.

Put in a bowl.

Stir lightly.

Add the raw tahini(to get a creamier consistency,

you can put alittle in the blender with some pure water)

or, pesto, or miso. whichever you choose.

Toss in with cta.

Sprinkle dill (& paprika, sea salt, taste to see what you'd like)

 

Scoop all salad on top of a plate of lettuce leaves for presentation.

Sprinkle with sea salt & black sesame seeds if you have them on hand.

 

 

 

 

 

 

Good Day Soup

(raw vegan version)

 

 

Ingredients:

 

6 ripe peaches

dash of nutmeg

1/4 tsp. cinnamon

4-6 tbs. lemon juice

1 cup fresh squeezed orange juice (optional)

You can also add 1-2 tbs. of raw honey, agave nectar, etc.

for sweetness.

 

 

 

Recipe:

 

Blend all ingredients in a blender,

adding in the lemon juice/orange juice slowly so that you get a creamy

consistency. Poor into soup bowls, and enjoy

 

You can also garnish with blueberries if you so desire...

 

 

 

 

 

I haven't actually taste tested either of these concoctions yet,

but I think they sound amazing.

Very simple, delicious, creative, raw vegan dishes.

Thanks andesuma. I'm hosting a raw vegan potluck today and I'm going to make both of these. I'll let you know how they turn out!

Honestly, I just think peaches blended with cinnamon on top sounds great.
