My Dietitian/Trainer has allowed me to have Seitan and I discovered this at Trader Joes and it is SOOOOOO yummy! I only allow myself to have it once a day though, because it is somewhat processed. Pretty dang tasty but the wheat gluten my body finds difficult to digest and ends in gasiness and other unpleasent things.. too bad, because I think they taste great when marinated or on their own.
