I just posted this on my blogand thought someone here might find it useful. TVP Meatloaf: (adapted from here) -2 c. water -1/2 c. ketchup -2 tbsp. tamari -2 c. unconstituted TVP -1/2 c. oats -1/4 c. ground flax -1 tbsp. nutritional yeast -3 tsp. garlic powder -2 tsp. onion powder -1/3 c. bbq sauce (whichever one is your favourite) 1. Preheat oven to 375 F. 2. Mix water, ketchup, and tamari. Add TVP and let sit 10 minutes. 3. Add in oats, flax, nutritional yeast, garlic powder, and onion powder. Mix. 4. On a cooking sheet, form the mixture into a loaf. Trust me, this ends up with a nice outer crust that you don't get with a loaf pan. Bake 30 minutes. 5. Spread bbq sa…

Today I made an epicfailburger, in an attempt to try to avoid using non-whole food ingredients I started by sauteing about a cup of baby portabellas, diced red onion, and a few cloves of garlic, then mashed this together with 15 oz black beans. Of course this mixture by itself was way too sloppy too work as a patty, so I threw in some pumpkin seeds to try to dry it up. While this did work, the addition of nuts seems to completely overpower the other ingredients. I was really hoping for mushroom/black bean/onion/garlic to be the dominating flavors. And frustratingly, most of the bean burger recipes out there seem to call for flour, corn starch, or something of the sort…

Has anyone ever tried scheese? It's supposed to be vegan "cheese" imported from Ireland. I recently heard about this & plan on making a trip to a health store to buy some. So, is it pretty good or just a waste of money? Sounds disgusting, but I'm willing to give it a try. I have been having a hard time, no...a very hard time finding a cheese substitute. I love cheese. And yes I know what's in it.

I'm not that much of a baker because it's an exact science instead of cooking, which is more of a passionate blend of the senses. I found this source for ingredient functions and thought it would be rather helpful for anyone who isn't quite sure of what certain ingredients lend to any recipe (baked or cooked). http://www.recipetips.com/kitchen-tips/t--657/ingredient-functions.asp It's a looong list, so I recommend doing a Ctrl + F to search for what you're looking for. As vegans, it's helpful to know what the ingredients do so we can better replace them as needed.

An amazing resource for visual learners! Or for those who just want to see it before they eat it. http://www.youtube.com/user/hippygourmet He sometimes features non-vegan foods, and once that I know of a non-vegetarian dish. But most of the time, he can hit the spot! They even have raw food recipes and vegan cookies made with solar ovens.

Let's start a mung recipe thread. Here's the thick soup I'm loving lately. Rinse the beans and look for stones, etc. I prefer the whole green mung beans, but the skinned and split mung dahl, which is yellow, is great as well. Bring a quart of water to boil and add a cup of mung, cover to simmer on a back burner. Keep more than enough water in so they don't burn. In a heavy bottomed pan heat oil and add a pinch of coriander seed, a pinch of cumin seeds, a pinch of black mustard seeds and a pinch of crushed red pepper. Don't burn the seeds, fry them a long moment, until it smells good, add a half teaspoon of turmeric powder, fry a moment then add minced onion/garlic/f…

I don't know if this is the section for it, but I found these vegan king prawns. http://img.photobucket.com/albums/v391/strawberryp0cky/recipes/KingPrawn.jpg They're made with: curdlan gum, veggie gum, veggie root starch, paprika, water, brown sugar, sea salt, and veggie seasoning. I don't really do meat replacements but I figured I'd give it a shot since, well, I can report back to you guys. I was scared that it would really taste like shrimp (since they really look like it) and gross me out, but they were pleasant and slightly sweet, that's about it. Very fresh taste. I put them in pad thai and it added a nice texture.

Enough said. Anyone try it? I had some of each sitting around and decided to make a paste with a rather small Hass Avocado and Peanut Butter and smear some on a single slice of Ezekiel 4:9 Toast.

I've had problems with pea protein for a long time. The taste is unpleasant and it's hard to mask it with anything. Thus far only decent shake i've made was to blend lot of berries along the protein, which mask the taste to some degree. Worst thing I tried was adding cocoa powder. It tasted absolutely foul and I had to spit it out, and pour the rest away I use about 1 dl of the stuff at once to get good amount of protein. On the other hand the more it is used, stronger the taste will be.. What recipes have you invented to make this stuff drinkable?

Thanks to JP from the VF forums for the recipe. These are pretty high in fat & calories, but they're great for all the bulkers out there. 1 cup protein powder (I used soy) 1 cup natural peanut butter 1 cup oats 8 tbsp syrup - Melt the PB and syrup in the microwave for a minute or so. - Mix this with the oats and protein powder. - I also added a few splashes of soy milk and some raisins. Just judge it for yourself. You don't want it to be too dry. You could use water too. - Spread the mixture into a tray and put it in the fridge until it's firm, cut into bars and freeze some if they're not going to be consumed within a few days. * I will probably melt some dark…

I made this for lunch today. It was so tasty and simple. 400g can chickpeas/garbanzo beans A good squirt or a few tbsp of vegan mayo Salt & pepper Optional - chopped celery - Mash the chickpeas as much or as little as you like. I left some whole for a bit of texture. - Mix in the mayo, salt and pepper - Done It's good by itself, but this time I had it with some baby spinach and a couple of slices of tomato. Contains just over 20g protein. http://img.photobucket.com/albums/v52/essjayyell/IMG_0500.jpg

http://www.readthebridge.info/7631 Seward resident brings vegan show to the web by Tara Bannow (January 21, 2009) With its sunny, modest kitchen, charming living room and a medley of rescued animals frolicking across the wooden floors, Meagan Holtgrewe’s Seward home might seem an unlikely spot to host a cooking show. But, then again, few things about the show are typical of the genre. Rhymes With Vegan, (a play on the pronunciation of Holtgrewe’s first name) is an exclusively online cooking show promoting the vegan lifestyle — cooking without the use of meat or dairy products. Holtgrewe, the creator, host and chef, said she hopes her show will “demystify” common mis…
